A Story Tempered By Time

Hare Tree Truffles was established in 2011 with a vision to bring something extraordinary to Ireland’s fertile Midlands. What began as a small plot of land destined for forestry soon evolved into a pioneering project: a truffle orchard. This was no ordinary woodland. Carefully chosen native tree species — birch, hazelnut, and oak — were selected and inoculated with truffle mycelium before planting.

Since that first planting, the orchard has been meticulously managed, allowing nature to take its course with minimal external interference. Beyond routine grass control, the land has been left to thrive naturally, fostering an ideal environment for the truffle mycelium to flourish.

Over the years, this carefully nurtured woodland has become a thriving ecosystem in its own right. The symbiotic relationship between the truffle mycelium and the native trees has encouraged a rich biodiversity to emerge. A variety of plants, insects, and fungi have taken root in the soil, while birds, small mammals, and pollinators such as bees and butterflies have made the orchard their home. This thriving biodiversity is not only vital to the health of the land but also integral to the quality and character of the truffles that grow beneath the soil.

After years of careful stewardship and patience, this unique ecosystem has begun to yield an exceptional harvest: truffles that are unmistakably Irish, rooted in our land and fostering a new heritage.
